Resident pizza chef, Dan Britt, has leveraged the constraints of producing pizza in a wholesale bread bakery to generate some really incredible results. What are the constraints at Merzbacher's? They don't have any kitchen equipment except mixers and bread ovens, they don't use meat, etc, etc. Because of these limitations, they've been forced to come up with new ideas and focus on doing a small number of pizzas exceptionally well. One taste of this tomato pie (which happens to be vegan), and you'll understand just how delicious limitations can be.
